Simple spinach toast with poached egg
It’s how breakfast is done – quick and easy!
Yes, avocado toast is delicious and fun to take photos of on Instagram. But it’s not the only veggie toast out there! This spinach toast with a poached egg is definitely eggcellent competition.
INGREDIENTS
- 1 slice of toast
- 1 egg
- 4 ounces spinach
- Butter
- Salt and pepper
DIRECTIONS
Add enough water to a sauce pot so there is about 2 inches of water. Pre grease the poacher with butter or oil and crack the egg into the poacher. Bring the pot to a boil and add poachers, Reduce to a simmer and put lid back on. Cook to your desired preference, the poaching time should be 4-5 minutes.
Melt 1 tablespoon of butter in a sauté pan, add in the spinach and a pinch of salt. Cook until spinach has fully reduced.
Toast your favourite bread in a toaster.
Stack the cooked spinach on top of the toast and add the poached egg, with salt and pepper.
